Breaded and Fried Oyster Mushrooms

 

Here's one of the simplest of mushroom recipes. You can use a deep fryer or simply use a frying pan and a bit of oil. I don't like to deep-fry, so I prefer a non-stick skillet and a bit of olive oil.

Beat the eggs briefly with a fork or whisk. Mix in the corn meal, bread crumbs, salt, pepper, garlic powder and paprika. Heat the oil in a skillet. Dip bite-sized pieces of mushrooms into the batter and place them in the skillet, a few at a time. Turn them over when they turn brown, then remove the cooked pieces to a rack covered with paper towels (to drain the oil). Gently press against the towel with a spatula to remove more oil. Sprinkle with additional salt if desired, and eat them before they get cold!
